Easy feta and asparagus salad recipe

Enjoy seasonal flavours and make the most of May with this easy and delicious asparagus salad with feta. See recipe below.




Ingredients:


  • Bag of Pea shoots or other salad leaves, sliced cherry tomatoes, cucumber, avocado ( what ever you like )

  • Handful of small radishes sliced

  • Simple vinaigrette (3 parts Olive oil,  1 teaspoon dijon mustard and 1 part  vinegar simple vinaigrette , salt and pepper to taste- combine all the ingredients and shake in a jar taste and adjust seasoning as required)

  • Seeds or nuts such as walnuts or hazelnuts

  • 100 g of crumbled feta ( or goats or a blue cheese)- something tangy works well



Method:


Wash the asparagus then snap off any woody ends, then run a vegetable peeler along the length of each spear to make long thin ribbons. If the asparagus is tender, the ribbons should have a slight, pleasant crunch.  You could also peel some thin strips of carrot or courgette, pile all into a dish or plate. A  Add leaves and radish and add the vinaigrette just before serving and crumble on the cheese.  Serve with a bowl of hot buttered jersey royals - heaven on a plate!!
