Healthy flapjack recipe for an energy boosting snack

Healthy flapjacks make an excellent quick pick me up and energy boosting snack! This healthy flapjack recipe is an easy and tasty option for when hunger strikes.


Ingredients


  • 3 tsp of chia seeds

  • 140g dried cranberries, raisins , or other fruit of your choice

  • 55g dried apple

  • 55g dried apricot

  • 85g walnuts/ macadamia  or brazils

  • 30g pecans

  • 120g ground almonds

  • 1 tsp ground cinnamon or ginger

  • 30g white sesame seeds

  • 30g pine nuts

  • 120ml honey



Instructions:


Soak the chia seeds for 10 mins in a few teaspoons of warm water. Then, mix all the  ingredients together and blitz to a chunky crumb in a processor.  Heat the oven to 160 or  fan 140. Place in a 20 x 20 tin lined with greaseproof paper, pat down well and cook for 40 - 45 minutes until golden brown.  Allow to cool then cut into bars or squares.
